Roasted Potato Balls

8 large russet potatoes, cleaned and peeled
2 tablespoons butter
2 tablespoons olive oil
2 teaspoons dried rosemary (or 2 fresh sprigs)
2 cloves of garlic
salt and pepper, to taste

  1. Prepare a large sauce pan by filling it with water and a dash of salt. Turn on medium heat.
  2. Meanwhile, using a melon-baller, scoop out the potatoes into balls.
  3. Place the potatoes into the boiling pot of water and boil 1 minute.
  4. Remove the potato balls from the water and drain on paper towels.
  5. Melt the butter in a pan.  Once the butter starts to foam, add rosemary, garlic, salt, pepper and the potatoes.
  6. Continue to cook over medium heat, turning often.
  7. When the potatoes are golden brown, remove from the pan and serve immediately.
