Breakfast Casserole
This is a great recipe for a brunch or when you are serving a large crowd. You make it the night before, so it makes the morning that much easier! Serve with some orange juice, fresh fruit and toast.
Breakfast Casserole
Ingredients:
24 slices of white bread
8 eggs
1 pound sausage or bacon
4 green onions
2 cups shredded cheddar jack cheese
1 cup milk
salt, pepper, butter
Directions:
The night before:
- Prepare your casserole dish (9×13) with butter.
- Cook your meat and drain away any fat. If you are making it with bacon, crumble the bacon.
- Trim the crusts off your bread.
- Layer bread in the bottom of your casserole dish (create 1 layer, saving the remaining bread for additional layers)
- In a mixing bowl, slightly beat eggs, salt, pepper and milk until well combined.
- Pour egg mixture over your layer of bread.
- Sprinkle 1/3 of the meat over the egg layer
- Sprinkle 1/3 of the cheese over the meat
- Create another layer of bread and repeat the layering of eggs, meat cheese, bread.
- After all the layers have been completed (you should have ended with a cheese layer) sprinkle green onions over the top.
- Cover with foil lightly (it doesn’t need to be a tight fit as you don’t want the cheese to melt and get stuck to the foil).
- Bake for 45 minutes.
- Remove the foil.
- Bake for an additional 15 minutes or until the center is fully cooked (you don’t want raw eggs).
- Remove from the oven and let rest for at least 15 minutes before cutting into squares.
- Serves about 8 as a main dish.
