Brisket Tacos

These tacos are so amazingly delicious. My husband asks for them on EVERY special occasion! Mouth watering flavor makes them worth the extra effort and time.
Ingredients
- 1 Brisket recipe (here)- leftovers (this will not use a whole brisket)
- 1+ 1/2 cup shredded cheddar cheese or Colby jack shredded (reserve 1/2 cup for topping tacos)
- 6 cloves of garlic
- 6 small flour tortilla shells
- 1 bunch cilantro
- 1/4 cup minced white onion
Instructions
- Prepare beef brisket as directed.
- Preheat a large skillet or griddle.
- Once hot, crush one clove of garlic in a small section (you will use one garlic clove per taco, so if you have room to heat more than one taco shell at a time, then crush one clove per tortilla.)
- Immediately sprinkle a large pinch of cheese in a circle the size of the tortilla over the garlic.
- The cheese will start to melt into an almost solid circle of ooey goodness.
- Let cheese continue to cook until the edges start to brown.
- Lay tortilla on top of melting cheese.
- Continue to cook until the cheese is crusty and adhered to the tortilla.
- While the tortilla is still in the pan, place (hot) brisket meat into the shell.
- Fold shell over the meat (taco style) and remove from the pan.
- Continue the process until all your tacos are completed.
- Top tacos with chopped cilantro, onion and cheese.
