Eggplant Parmesan

Eggplant Parmesan is a great dish for meatless Mondays!
Ingredients
- 1 med/ large eggplant
- 1/2 cup cooking oil
- 1 8oz. can tomato sauce
- fresh basil
- 1/2 cup grated parmesan cheese
- 8 oz. low moisture mozzarella cheese
Instructions
- Preheat the oven to 425°F.
- Wash and peel the eggplant and cut into 1/4 inch slices.
- In a fry pan, heat the oil and fry the eggplant slices until lightly browned.
- Drain the fried eggplant on paper towels.
- In a baking dish, layer the eggplant, tomato sauce, parmesan cheese and mozzarella. 2-3 slices high.
- Top with remaining mozzarella.
- Bake 10-15 minutes until the cheese is completely melted.
