Eggplant Parmesan is a great dish for meatless Mondays! 

Ingredients

  • 1 med/ large eggplant
  • 1/2 cup cooking oil
  • 1 8oz. can tomato sauce
  • fresh basil
  • 1/2 cup grated parmesan cheese
  • 8 oz. low moisture mozzarella cheese

Instructions

  • Preheat the oven to 425°F.
  • Wash and peel the eggplant and cut into 1/4 inch slices.
  • In a fry pan, heat the oil and fry the eggplant slices until lightly browned.
  • Drain the fried eggplant on paper towels.
  • In a baking dish, layer the eggplant, tomato sauce, parmesan cheese and mozzarella. 2-3 slices high.
  • Top with remaining mozzarella.
  • Bake 10-15 minutes until the cheese is completely melted.
