Mexican Meatloaf
This is a great twist on a classic and the whole family will like this version served with tortilla chips!
Ingredients:
1.5 pounds lean ground beef or turkey
2 cups salsa- separated into 1.5 cups and .5 cups for the top (The level of spice is up to you. Don’t use fresh salsa as it tends to make the meatloaf watery.)
2 eggs
1/2 cup bread crumbs
1/2 tsp. ground black pepper
1 bag tortilla chips
Directions:
- Preheat oven to 375 degrees.
- Prepare a loaf pan by spraying it with cooking spray.
- Combine all ingredients (using 1.5 cups of the salsa) in a mixing bowl and combine (using your hands for this makes the job much easier!)
- Once combined, press into your prepared pan.
- Top with the remaining .5 cup salsa.
- Bake for 1 to 1.25 hours until completely cooked.
- Remove from oven and let rest for 10 minutes.
- Scoop out (not slices like traditional meatloaf) onto plates and serve with tortilla chips and sour cream if desired. (Eat as if the meat loaf was a dip, scooping it up with the tortilla chips.)
