Nacho Bean Dip
Putting a little extra effort into this dip is worth the compliments you will receive when you serve it to a hungry bunch!
Ingredients:
2 Tablespoons vegetable oil
1 medium onion, chopped fine
2 medium green tomatoes, chopped
2 cups red kidney beans (approx. 2 cans drained)
1 1/2 cups taco sauce
1 1/2 cups shredded cheddar cheese
Directions:

- In a large skillet, heat oil over medium/ high heat.
- Once hot, saute onion, add the green tomatoes and cook 5 more minutes.
- Add the beans and 1 cup of the taco sauce.
- Continue cooking for 15 minutes.
- Pour mixture into a shallow baking dish (8×10 inch size)
- Sprinkle cheese over the top.
- Pour remaining taco sauce over the top.
- Broil in oven until cheese is melted and bubbly.
- Serve with tortilla chips.
