Nacho Bean Dip

Putting a little extra effort into this dip is worth the compliments you will receive when you serve it to a hungry bunch!


2 Tablespoons vegetable oil

1 medium onion, chopped fine

2 medium green tomatoes, chopped

2 cups red kidney beans (approx. 2 cans drained)

1 1/2 cups taco sauce

1 1/2 cups shredded cheddar cheese


      1.  In a large skillet, heat oil over medium/ high heat.
      2. Once hot, saute onion, add the green tomatoes and cook 5 more minutes.
      3. Add the beans and 1 cup of the taco sauce.
      4. Continue cooking for 15 minutes.
      5. Pour mixture into a shallow baking dish (8×10 inch size)
      6. Sprinkle cheese over the top.
      7. Pour remaining taco sauce over the top.
      8. Broil in oven until cheese is melted and bubbly.
      9. Serve with tortilla chips.
