Peanut Brittle (Microwave)

Microwave Peanut Brittle

Ingredients:
1 cup raw spanish peanuts

1 cup sugar

1/2 cup light corn syrup

1 tablespoon butter

1 teaspoon vanilla

1 teaspoon baking soda

Directions:
1. Prepare a cookie sheet by greasing it with Crisco. Set aside.

(Microwaves vary in power, so watch your mixture so it doesn’t burn.  The follow times are approximate and will vary depending on your microwave.)

2. In a microwave proof mixing bowl, combine all ingredients.

3. Mix completely.

4. Microwave on 50% power for 4 minutes.

5. Stir mixture and return to microwave.

6. Microwave at 100% power for 4 more minutes.

7. Add butter and vanilla to the bowl.

8. Microwave at 100% power for another 2 minutes.

9. Add baking soda. (this will make the mixture foam.)

10. Pour mixture onto a greased cookie sheet and let cool.
