Peanut Butter Cookies
These cookies are so, so simple and a great last minute treat for the family.
Ingredients:
2 eggs
2 cups peanut butter (creamy or chunky will work)
2 cups sugar
Directions:
- Preheat oven to 375.
- Combine sugar and eggs and beat with an electric beater/ or mixer until light and fluffy.
- Add the peanut butter and mix until combined.
- Refrigerate 10 minutes.
- Scoop out dough to make 1 inch ball. (Using a cookie scoop makes nice even sized cookies.)
- Once you have a cookie sheet worth, use the back of a fork to make a criss-cross pattern to flatten the cookies out.
- Bake for about 8 minutes until they are no longer doughy.
- Remove from oven and let cool 5 minutes before moving them to a cooling rack to finish cooling.
- Eat em!
