Peanut Butter Cookies

These cookies are so, so simple and a great last minute treat for the family.


2 eggs

2 cups peanut butter (creamy or chunky will work)

2 cups sugar


  1. Preheat oven to 375.
  2. Combine sugar and eggs and beat with an electric beater/ or mixer until light and fluffy.
  3. Add the peanut butter and mix until combined.
  4. Refrigerate 10 minutes.
  5. Scoop out dough to make 1 inch ball.  (Using a cookie scoop makes nice even sized cookies.)
  6. Once you have a cookie sheet worth, use the back of a fork to make a criss-cross pattern to flatten the cookies out.
  7. Bake for about 8 minutes until they are no longer doughy.
  8. Remove from oven and let cool 5 minutes before moving them to a cooling rack to finish cooling.
  9. Eat em!
