Roasted Potato Balls
Ingredients:
8 large russet potatoes, cleaned and peeled
2 tablespoons butter
2 tablespoons olive oil
2 teaspoons dried rosemary (or 2 fresh sprigs)
2 cloves of garlic
salt and pepper, to taste
Directions:
- Prepare a large sauce pan by filling it with water and a dash of salt. Turn on medium heat.
- Meanwhile, using a melon-baller, scoop out the potatoes into balls.
- Place the potatoes into the boiling pot of water and boil 1 minute.
- Remove the potato balls from the water and drain on paper towels.
- Melt the butter in a pan. Once the butter starts to foam, add rosemary, garlic, salt, pepper and the potatoes.
- Continue to cook over medium heat, turning often.
- When the potatoes are golden brown, remove from the pan and serve immediately.
