Saturday Morning Donuts

What a treat homemade donuts are for a Saturday morning breakfast. This recipe is quick and easy to make and not hard to prepare.

Ingredients:

1/2 cup butter

1 cup water, boiling

1 cup flour

4 eggs, whole

 

Directions:

Making the batter:

  1. In a saucepan, bring water to a boil.
  2. Add butter, cut into cubes
  3. Once boiling, slowly add in flour and mix completely (with heat still on).
  4. Continuing cooking until the dough pulls away cleanly from the sides of the pan.
  5. Remove from heat.
  6. Add in eggs, one at a time, mixing completely after each egg.
  7. Continue to mix until the glaze disappears.

Prepare the Icing:

  1. You can coat the donuts in powdered sugar OR sugar and cinnamon OR icing (directions below).  What ever you choose prepare a bowl with the topping and set aside.
  2. Icing: 2 cups powdered sugar and 3 Tablespoons water.  Combine.  This should be runny but not watery.  If needed add more powdered sugar.

Frying the donuts:

  1. Heat cooking oil in fryer (or large cast iron pot) to 375℉.
  2. Scoop 1/4 of the donut batter into a donut hopper or a pastry bag fitted with a very large star tip.
  3. If using a pastry bag, squeeze a circle of dough onto wax paper (the ring of dough should look like a mini donut- 1/5 of the size of a regular donut).  It will expand in the oil.
  4. Pastry bag directions: carefully scoop ring of dough into a fry basket and gently lower into the oil.
  5. Hopper direction: Directly into the hot oil release a ring of dough.
  6. Once in the oil cook until golden brown on one side, then gently flip to cook the other side.
  7. Remove from oil and place on a cooling rack to let the extra oil drain.

Icing or Topping:

  1. Once the donuts have set for 1 minute dip into your topping, coating both sides.
