Simple Mexican Salad

Ingredients:

1/2 head cabbage, shredded finely (about 5 cups)

4 carrots, grated

1/2 cup sour cream

2 tablespoons apple cider vinegar

1 tablespoon olive oil

1 1/2 teaspoons salt

Pepper, to taste

Directions:

In a bowl, combine cabbage and carrots.  In the blender, combine remaining ingredients.  Blend on high until well mixed.  Pour dressing over cabbage/ carrot mixture.  Mix thoroughly.  It can be served immediately or stored in the refrigerator.
