Stuffed Mushrooms

Ingredients:

2 dozen white mushrooms, washed and de-stemmed (chop up the stems into mini pieces)

1/4 cup butter, melted

1/3 cup dry bread crumbs

1/2 package of dried onion soup mix (this is to taste)

1/2 cup minced walnuts (optional)

4 tablespoons sherry (or red wine)

1/2 cup shredded or grated parmesan cheese

Directions:

  1. Preheat broiler.
  2. Wash and prepare mushroom caps and stems.
  3. In a mixing bowl combine diced mushroom stems, butter, bread crumbs, onion soup mix, walnuts and sherry. Mix until combined.
  4. Fill each mushroom cap with the mixture.
  5. Place filled caps on baking sheet and top with parmesan cheese.
  6. Broil until warmed through.
  7. Serve warm.
