Super Moist Corn Bread
Corn bread is the perfect pairing fora big bowl of chili or bean soup. This recipe is exceptionally moist and easy to make!
Ingredients:
1 1/2 cups milk, scalded
1 1/2 cups corn meal, ground
2 tablespoons butter
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1 egg, divided into yolk and white
Directions:
- In a pan, scald milk.
- In a bowl, combine scalded milk, corn meal, salt and butter.
- Set aside to cool.
- Once cool, add baking powder and egg yolk and mix completely.
- In a separate bowl, beat egg white until stiff with a hand mixer.
- Carefully fold egg white into the batter.
- Pour batter into well greased pan.
- Bake at 400℉ for approximately 20 minutes.
