Swedish Pancakes

Ingredients:

5 eggs

1/2 cup sugar

1/2 cup melted butter

2 cups milk

1 cup light evaporated milk

1 1/2 cups flour

Directions:

  1. Preheat an electric skillet to 350 degrees.
  2. In a mixing bowl, beat eggs, sugar, butter and milk together with a hand mixer.
  3. Slowly start to add the flour, 1/2 cup at a time.
  4. Mix until smooth.
  5. With a medium size ladle, ladle 1 full scoop into the skillet.
  6. Pick up the skillet and swirl it around so you have a thin coating of the batter over the entire bottom of the pan (add more batter if you need to).
  7. Once the pancake starts to brown around the edges, flip it over and cook the other side.
  8. Serve hot.
