A new, healthier twist on a classic zucchini bread recipe. This is supremely moist and yummy breakfast bread. Even our pickiest eaters couldn’t get enough of it.
Ingredients:
3 eggs
1 cup of applesauce
1 cup white sugar
1 cup brown sugar
4 small zucchinis (washed and grated)
3 teaspoons vanilla
1 1/2 cups white flour
1 1/2 cups whole wheat flour
1 teaspoon salt
1 teaspoon baking soda
3 teaspoons cinnamon
1/4 teaspoon baking powder
1/2 cup chopped walnuts
1 cup golden raisins
Directions:
Preheat oven to 350℉.
Prepare to bread pans by spraying with cooking spray (or using Crisco).
Clean and trim ends off of the zucchini.
With a grater (or food processor), grate all zucchini.
In the same bowl, add eggs, applesauce, and vanilla.
Set aside.
In a large mixing bowl, combine remaining dry ingredients.
Stir.
Pour wet ingredients into the dry ingredient bowl.
Combine completely.
Pour batter evenly into the bread pans.
Bake for 1 hour.
Remove and let rest for at least 5 minutes before cutting and serving.
