Zucchini Rounds
Ingredients:
1 zucchini squash
1 Tablespoon chopped green onions
1 teaspoon sour cream
1 3oz package cream cheese
2 teaspoons chopped parsley
1/2 teaspoon white vinegar
Directions:
- Peel outside of zucchini with a potato peeler
- Core out the inside of the zucchini, removing all the seeds and leaving a hallow center.
- In a small bowl combine remaining ingredients.
- Stuff the inside of the zucchini with the mixture.
- Wrap tightly with plastic wrap and place in refrigerator.
- Once chilled, remove wrap and slice into slices (with the cream cheese as the center).
- Serve chilled.
