Stuffed Peppers

Stuffed peppers are an easy recipe for those busy nights and use simple ingredients. They also make great lunches for the next day as they can be reheated easily!
Ingredients
- 6 bell peppers
- 1/2 onion, finely chopped
- 1 1/4 cups ground meat
- 1 cup water or stock
- 1 1/4 cups moistened bread crumbs
- Salt and pepper, to taste
- 1 Tablespoon butter
Instructions
- Heat oven to 375 degrees.
- Cut top off of peppers and clean out the insides, being careful not to tear the pepper.
- In a bowl combine the meat, bread crumbs, salt and pepper, and onion.
- Stuff the peppers with the mixture.
- Place stuffed peppers in a baking pan.
- Add stock to the bottom of the baking pan.
- Bake for 20 minutes or until the meat is thoroughly cooked.
