Skillet Mexican Dinner

A great last minute recipe using leftovers and pantry staples. Spice it up to your family’s taste, it can be mild to super hot spicy.
Recipe:
Ingredients
- 1 pound ground turkey
- 1/4 cup minced red onion
- 1 10oz can of Rotel tomatoes and chilies
- 1 teaspoon cumin
- 1 teaspoon Montreal Chicken Seasoning
- 1/2 cup salsa
- Hot sauce (to taste)
- 1 teaspoon salt
- 1/4 teaspoon garlic powder
- 4 cups rice (cooked- leftover rice works great for this recipe)
- Shredded cheese and tortilla chips (toppings)
Instructions
- In a large skillet, brown the turkey and onions until brown and tender. Add in remaining ingredients (except rice) and simmer until slightly thickened.
- Add in rice and continue to simmer until rice is heated thoroughly.
- Serve with cheese and tortilla chips.
