Swedish Pancakes
Ingredients:
5 eggs
1/2 cup sugar
1/2 cup melted butter
2 cups milk
1 cup light evaporated milk
1 1/2 cups flour
Directions:
- Preheat an electric skillet to 350 degrees.
- In a mixing bowl, beat eggs, sugar, butter and milk together with a hand mixer.
- Slowly start to add the flour, 1/2 cup at a time.
- Mix until smooth.
- With a medium size ladle, ladle 1 full scoop into the skillet.
- Pick up the skillet and swirl it around so you have a thin coating of the batter over the entire bottom of the pan (add more batter if you need to).
- Once the pancake starts to brown around the edges, flip it over and cook the other side.
- Serve hot.
