Zucchini Rounds

Ingredients:

1 zucchini squash

1 Tablespoon chopped green onions

1 teaspoon sour cream

1 3oz package cream cheese

2 teaspoons chopped parsley

1/2 teaspoon white vinegar

Directions:

  1. Peel outside of zucchini with a potato peeler
  2. Core out the inside of the zucchini, removing all the seeds and leaving a hallow center.
  3. In a small bowl combine remaining ingredients.
  4. Stuff the inside of the zucchini with the mixture.
  5. Wrap tightly with plastic wrap and place in refrigerator.
  6. Once chilled, remove wrap and slice into slices (with the cream cheese as the center).
  7. Serve chilled.
