Hot Seafood Salad

This hot salad is a little something different (and yummy) to serve your guests at your next get together.
Ingredients
- 1 cup mayonnaise
- 1 tsp. grated lemon peel
- 2 tsp. fresh lemon juice
- 2 tsp. finely minced onion
- 1/2 tsp. salt
- 2 cups cooked crab or shrimp meat (or a combination of both)
- 2 cups chopped celery
- 1 cup slivered almonds
- 1/2 cup sharp cheddar cheese, grated
- 1 cup plain potato chips, crushed
- Lemons, for garnish
Instructions
- Preheat oven to 400°F.
- Blend mayonnaise with lemon peel, juice, onion and salt. Gently mix in the meat, celery and almonds.
- Spoon into individual ramekins and place on a baking sheet. Top with cheese and potato chips.
- Bake for 15 minutes or until bubbly hot.
- Serve with lemon wedges.
