Budina (Basque Custard)
Ingredients:
Milk Mixture:
2 cans evaporated milk
1 qt. milk
1/2 tsp. salt
3 sticks of cinnamon
Egg Mixture:
14 eggs
1 cup sugar
1 Tablespoon+ 1 teaspoon vanilla
Directions:

- In a heavy saucepan, heat both milks, salt and cinnamon sticks over medium heat until it’s scalded.
- Remove from heat, cover and keep warm.
- In a mixing bowl, beat eggs for 1 minute.
- Gradually add in sugar and vanilla, mix until blended.
- Strain egg mixture through strainer.
- Combine milk into the egg mixture.
- Pour mixture into a baking dish.
- Set baking dish into a larger baking dish that has 1 inch of water.
- Bake at 325℉ for 1 hour, 10 minutes.
- Remove from oven and cool in refrigerator for at least 8 hours.
