Budina (Basque Custard)

Ingredients:

Milk Mixture:
2 cans evaporated milk
1 qt. milk
1/2 tsp. salt
3 sticks of cinnamon

Egg Mixture:
14 eggs
1 cup sugar
1 Tablespoon+ 1 teaspoon vanilla

Directions:

    1. In a heavy saucepan, heat both milks, salt and cinnamon sticks over medium heat until it’s scalded.
    2. Remove from heat, cover and keep warm.
    3. In a mixing bowl, beat eggs for 1 minute.
    4. Gradually add in sugar and vanilla, mix until blended.
    5. Strain egg mixture through strainer.
    6. Combine milk into the egg mixture.
    7. Pour mixture into a baking dish.
    8. Set baking dish into a larger baking dish that has 1 inch of water.
    9. Bake at 325℉ for 1 hour, 10 minutes.
    10. Remove from oven and cool in refrigerator for at least 8 hours.
