Lemon Frosted Fruit Bars

Like something mom would make for an afternoon snack.  Basic ingredients and easy to make when you don’t have a ton of time. 


  • 1 egg, white and yolk separated
  • 1/4 cup brown sugar, firmly packed
  • 1/4 cup molasses
  • 1/2 cup sour cream
  • 1.5 cups sifted white flour
  • 1/4 tsp. baking soda
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/2 tsp. ground ginger
  • 1/2 cup chopped walnuts
  • 1/2 cup chopped dates
  • 1/2 tsp. vanilla


  • Preheat oven to 400°F.
  • Mix the egg yolk, brown sugar with the molasses. Once creamed, add in the sour cream. In a separate bowl, combine the flour, baking soda, baking powder, salt and ginger. Sift dry mixture into the egg mixture. Add in nuts, dates and vanilla and stir until combined.
  • Pour into greased and floured pan 8×12.
  • Bake for 15 minutes.
  • Cool completely.
  • For the frosting, beat the egg until light and fluffy. Add in the salt and 1/2 cup powdered sugar. Finish off with the lemon juice.
  • Frost the bars and cut into pieces for serving.
