Saturday Morning Donuts
What a treat homemade donuts are for a Saturday morning breakfast. This recipe is quick and easy to make and not hard to prepare.
Ingredients:
1/2 cup butter
1 cup water, boiling
1 cup flour
4 eggs, whole
Directions:
Making the batter:
- In a saucepan, bring water to a boil.
- Add butter, cut into cubes
- Once boiling, slowly add in flour and mix completely (with heat still on).
- Continuing cooking until the dough pulls away cleanly from the sides of the pan.
- Remove from heat.
- Add in eggs, one at a time, mixing completely after each egg.
- Continue to mix until the glaze disappears.
Prepare the Icing:
- You can coat the donuts in powdered sugar OR sugar and cinnamon OR icing (directions below). What ever you choose prepare a bowl with the topping and set aside.
- Icing: 2 cups powdered sugar and 3 Tablespoons water. Combine. This should be runny but not watery. If needed add more powdered sugar.
Frying the donuts:
- Heat cooking oil in fryer (or large cast iron pot) to 375℉.
- Scoop 1/4 of the donut batter into a donut hopper or a pastry bag fitted with a very large star tip.
- If using a pastry bag, squeeze a circle of dough onto wax paper (the ring of dough should look like a mini donut- 1/5 of the size of a regular donut). It will expand in the oil.
- Pastry bag directions: carefully scoop ring of dough into a fry basket and gently lower into the oil.
- Hopper direction: Directly into the hot oil release a ring of dough.
- Once in the oil cook until golden brown on one side, then gently flip to cook the other side.
- Remove from oil and place on a cooling rack to let the extra oil drain.
Icing or Topping:
- Once the donuts have set for 1 minute dip into your topping, coating both sides.
