Spinach & Potato Frittata

Frittata is an easy one dish meal that can be eaten for dinner or breakfast (or both)! This recipe uses kitchen and freezer staples, making it a great quick to prepare meal.
Ingredients
- 1/2 pound small potatoes, peeled and thinly sliced
- 1 tablespoon canola oil
- 1/2 cup sliced green onions
- 1 10oz frozen spinach, defrosted and drained well
- 10 eggs (or 3 cups eggs substitute)
- 2 cups shredded cheddar cheese
- Salt and pepper to taste
Instructions
- Preheat oven to 400 degrees.
- In a large oven proof skillet, heat your oil. Add potatoes and onions, saute until tender. Remove from heat.
- In a bowl, combine remaining ingredients and pour over potatoes in the skillet.
- Bake in oven 15 minutes, or until done through to the center.
- Remove from oven and let rest for 5 minutes.
- Cut into 6 slices and serve warm.
