Rosemary Potatoes
Ingredients:
1.5 pounds of small red potatoes
2 tablespoons of olive oil
1 teaspoon of fresh rosemary, minced
1 teaspoon of fresh parsley, minced
salt and pepper
Directions:
- Preheat oven to 375 degrees.
- Boil potatoes until they are about half way cooked through.
- Remove water from pan, add oil and rosemary.
- Spread potatoes onto a baking sheet.
- Bake for 20 to 25 minutes.
- Remove from oven and sprinkle with parsley, salt and pepper. Toss to evenly coat.
