Berry Berry Jam

We had a ton of berries left over from last summer and thought we better use them up to make room in the freezer for this years crops.  Fresh jam on homemade bread is one of the best combinations in the kitchen!

Ingredients:

8 cups frozen berries (we used 2 cups blueberries and 6 cups raspberries)

6 cups sugar

1 package of pectin

Directions:

  1. Start by cooking the frozen berries down over medium- low heat until the liquid from the fruit is slightly thickened.
  2. (if you want to remove the seeds follow Steps 2-4)Remove from heat and let cool to room temperature.
  3. Once cooled, carefully push the fruit through a sieve with a large spoon into a large bowl.  (This process takes time, be patient and try to squeeze as much of the fruity goodness out of the berries.)

berry berry jam 14. Now that you have a bowl of juice, return the juice to the large pot

5. Add in the sugar. Add the pectin and follow setting instructions on your pectin package (varies by manufacturer).

6. Bring the mixture up to a boil, cooking over low heat and stirring constantly.

7. It will start to thicken.

8. Remove from heat.

9. Pour the jam into your prepared canning jars and seal.
